I can’t believe Summer is over! Lots of changes happening in the garden.  It’s nice to leave some of the evidence so the kids can visualize the life cycles.  Harvesting beets is a good sign the weather is changing. The 4th graders were all for trying something new and interesting so we dug in and dug them out!  It was a nice harvest…around 10 beets in total. We talked about how long it took to grow the beets.  They couldn’t believe I seeded them back in May!

The kids helped me wash them and prep them with a fresh squeeze of lemon and a sprinkle of salt.
